Who doesn’t love Banoffie Pie! From as early as I can remember I’ve always loved bananas as do my own children and combining them with toffee is a match made in heaven! I’ve seen many recipes for great banoffee pies and we’ve come up with a great cheese cake version that is both simple to make and utterly delicious! Our recipe can be made the day before and finished off on the evening of your dinner party as the cream cheese helps hold it all together. We really hope you enjoy making it!

 

 

Ingredients: (serves 6)

Base:

125 grams ginger biscuits
50 grams softened butter

Toffee Sauce:

200 ml double cream
200 grams dark brown sugar
100 grams butter
Few drops vanilla extract
Small pinch salt

Cheesecake mix:

250 grams cream cheese
250ml double cream
100ml natural yoghurt
50 grams icing sugar
Few drops vanilla extract
Drop of doterra ginger oil

Garnish:

2 bananas
Icing sugar to glaze

Method:

  • Make the base by crushing the ginger biscuits along with the softened butter

  • Press into your chosen mould and place in the fridge to set for about ten minutes

  • For the toffee sauce, boil all ingredients together until reduced by half and darkened and thickened - leave to cool

  • Meanwhile, whisk together all the ingredients for the cheesecake until stiff

  • Spoon some of the toffee sauce directly onto the base before adding the cheese cake mix and place back in the fridge to set for ten minutes or longer

  • Take back out of the fridge - remove from your mould - drizzle on some more toffee sauce

  • Garnish with sliced bananas

  • Caramelise your bananas for extra flavour and texture

  • Add dark or white chocolate chips to your base

  • Grate some chocolate onto your banoffee pie just before eating

  • The longer you cook your toffee sauce for, the thicker and darker it will become

  • The Doterra ginger oil is a great way to add flavour to your banoffee pie and it has it’s health benefits too
